Kitchen Tip: cleaning mushrooms

Instead of washing mushrooms under running water, try wiping them with a damp cloth or paper towel. Mushrooms act like sponges, when I soak or wash them under running water they become soggy. I just give them a little wet wipe to get the dirt off. The end cooking result is I retain the nice little crunch that some mushrooms have.

P.S. I was cooking Ina Garten's mushroom risotto from her new book "Back to the Basics" when I thought of posting this kitchen tip. It turned out very tasty.
