Sweet Potato and Goat Cheese Sandwich: move over, PB&J

If Mikey were a vegetable, I think he’d be a sweet potato. He’s crazy about the supernutritious tuberous root. Two of his favorite dishes are sweet potato casserole and sweet potato loaf (I haven't written about the loaf yet). He’ll eat a whole cooked sweet potato for a snack and sometimes I’ll cube one take it on the go. I am always searching for creative ways to serve the orange veggie. Here’s a yummy sweet potato and goat cheese sandwich that’s a great alternative to a peanut butter or almond butter sandwich.

1 small sweet potato

2 tablespoons goat cheese

1 slice of whole wheat bread

I like to cook sweet potatoes in the microwave. I usually keep a cooked sweet potato in the refrigerator for a quick snack. If I don’t have a potato on hand, I can easily cook one in five minutes. I scoop out the meat into a bowl and mix it with either warmed soft goat cheese or Chevrie.
